In fact, due to its coarseness, rock salt is considered more natural and healthy. The process of refining removes important minerals and that is why rock salt is considered better for consumption.

Rock salt works by lowering the freezing point of water, forming a brine solution of salt and water. The solution flows under the ice and breaks the bond between the ice and the surface, such as pavement. There are other formulations of ice melt, as well, that may be a more environmentally friendly solution.

Rock salt is used as a condiment and preservative in Indian cuisine, especially during fasting days. It adds a great flavour to chaats, chutneys, raitas and many other savoury Indian snacks and vegetable preparations. Its coarse texture makes it easy to pick up and sprinkle on food during or after cooking.
